Spiced Pumpkin Cupcakes
- 1 can pumpkin
- 1 box yellow cake mix (your favorite brand)
- 3 eggs
- 2 cups sugar
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmeg
- 1 cup evaporated milk
The Method:
Mix all the ingredients together, pour into cupcake liners and bake at 350 for 18-20 minutes.
Cinnamon Cream Cheese Icing
- 3 cups powdered sugar
- 1 block cream cheese (your favorite brand)
- 1 1/2 tsp cinnamon
- 1/4 cup unsalted butter
- 1 can vanilla frosting (your favorite brand)
The Method:
Soften cream cheese and butter, then mix all ingredients together. (This recipe makes a lot of icing…you could probably make two batches of cupcakes with one batch of icing)
