While planning meals for the week I couldn’t stop thinking about ways to make things a little easier on me, let’s face it, I cut corners, sometimes. Creating a healthy main dish recipe for my family isn’t a total challenge because I know how to make things easier but not compromising my family’s health. I’d rather cook my family a semi-homemade meal than completely eating take-out day in and day out, or meals from the freezer section at the grocery store. After all, new year, new way of cooking. I pulled out an old recipe that my family loves and put a little spin on it. I am this tasty Classic Chicken Parmesan with Fresh Mozzarella using Classico canned tomatoes.
Normally I would buy fresh tomatoes, wash, and crush them myself. I happily cut this step out with the help of Classico Crushed Tomatoes. When I was shopping I saw there were many varieties of Classico Canned Tomatoes. You can better believe I’ll be coming up with some semi-homemade alternatives to traditional dishes I make for my family.
It’s no secret, I adore cheese. Every chance I get to spruce up a dish I buy fresh cheese when possible. The fresh mozzarella really gives this dish an extra kick of flavor, and the melted cheesy layer you get to enjoy after this dish is done cooking is heavily. The cheeses pair really well with the Classico Crushed Tomatoes. I also love that Classico canned tomatoes are 100% all-natural, always packed fresh with no preservatives. This recipe was a huge hit with every member of my family, even our 17-month old loved it. Since I poked holes in the chicken before running through the egg wash and dry mix more of the Classico crushed tomatoes were absorbed making it so tender.

Classic Chicken Parmesan with Fresh Mozzarella

Ingredients
- 2lb boneless, skinless chicken breasts (4) (boneless, skinless)
- Classico Crushed Tomatoes (2 - 28 oz cans)
- 12oz spaghetti (about 4 cups - prepare according to directions on box)
- 2 cups bread crumbs
- 2 eggs
- 2 cups fresh parmesan cheese (grated, reserve 1/2 cup)
- fresh mozzarella cheese (shredded or sliced)
- 1 teaspoon dried oregano
- 1/4 teaspoon fresh cracked black pepper
- dash coarse sea salt
- dash dried parsley (reserve for garnish)
Directions

| Preheat oven 350 degrees. Mix bread crumbs, 1 1/2 cups parmesan cheese, dried oregano, salt, pepper in a large ziplock bag. | |

| Prepare baking dish (9" x 13") by pouring enough Classico Canned Tomatoes to cover the bottom of the dish. Slice mozzarella cheese (if you're using fresh cheese) and set aside. | |

| Crack eggs into a large shallow dish. Wisk eggs. Place chicken one piece at at time into the egg. Carefully poke holes into chicken using a fork. Completely cover chicken with the egg wash and place into bag. Close the bag and shake covering entire piece of chicken with the dry mix. | |

| Continue until you've filled the bottom of the dish. Pour Classico Canned Tomatoes to cover the first layer of chicken. Place or sprinkle mozzarella cheese over chicken. Continue until you've built two layers. Finish by pouring the rest of the Classico Canned Tomatoes out and sprinkle with your reserved 1/2 cup parmesan cheese. | |

| Your Chicken Parmesan might bubble over so I like to place mine on a cookie sheet. Place in the middle rack and cook 45-50 minutes. | |

I absolutely love Chicken Parmesan. I’ve never tried it with fresh mozzarella though, I’ll have to put it on my list.
